Pistachio-crusted rack of lamb

  • 1 garlic clove

  • 1 tablespoon of olive oil

  • 1 pinch of salt

  • 1 pinch of black pepper

  • 1kg rack of lamb

  • 100g of pistachio

  • ½ teaspoon of fresh rosemary

  • 1 egg


  1. Peel and mince the garlic clove. Combine the olive oil, minced garlic, salt and black pepper and rub the lamb rack with the mixture. Set aside.

  2. Put pistachios and fresh rosemary in a food processor or grinder and blend until you reach an even, grainy texture. Whisk the egg. Then brush the rack of lamb with the whisked egg all over before generously coating it with the pistachios. 

  3. Place the coated lamb rack in the Airfryer. Start the device with the settings indicated below:

    1. First stage: 180°c for 15 minutes on a low airspeed

    2. Second stage: 200°c for 4 mins on a high airspeed

  4. Once roasting is done, transfer the rack of lamb to a wooden cutting board and let it rest for about 10 minutes. Cut it carefully into lamb chops and serve.
